One day last year, my other half decided to take over my kitchen! “are you sure” did I ask him. He was. It doesn’t happened often I must say, but when it happens, I learnt to let go and let him in charge, because there is one thing I learnt with time: he can be full of surprises! As tonight, when we did those delicious and surprising little starters! I loved them and stole his recipe to share it here with you! 🙂
Ingredients for 6 verrines:
- 8 cherry tomatoes
- 1 small golden apple
- 2 third of a cucumber
- 1 garlic clove
- 6 slices of chorizo + 2 to decorate
- 3 tablespoons of crème fraiche
- 2 tablespoons of olive oil
- 2 teaspoons of chopped chives
- Salt, pepper
- Preparation: 20 mins
- Cooking: none
- Rest: 30 mins
1- Peel the cucumber and remove the seeds, then chop it into small dices. In a bowl, mix the cucumber with one tablespoon of olive oil, one teaspoon of chopped chives, salt, pepper, and stir.
2- Cut the cherry tomatoes into quarter, remove the seeds, chop into dices and set aside.
3- Do the same with the apple, and add it to the tomatoes, with one tablespoon of olive oil, salt, pepper and the rest of the chives, mix well.
4- Cut the chorizo slices into small dices and heat them into the microwaves at maximum power for 20 to 30 seconds, then dry them on paper towel. Chop the garlic and put it in a bowl with the chorizo (keep 2 or 3 dices of chorizo/verrine to decorate), pepper, paprika, and crème fraiche, and stir.
5- Spread the ingredient equally into the verrines: First the tomato/apple mix, then the cucumber, then the chorizo/crème fraiche mix, and finish off by 2 or 3 dices of chorizo on the top.
6- Keep in the fridge at least 30 minutes before serving it.
